Ingredients

  • 2 lbs (907g) ground beef (80/20 lean-to-fat ratio)
  • 1 medium onion, finely diced (about 1 cup)
  • 2 cloves garlic, minced
  • 2 large eggs, lightly beaten
  • 3/4 cup (175ml) milk
  • 2/3 cup (60g) plain breadcrumbs
  • 1/4 cup (60ml) ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 cup (120ml) ketchup (for glaze)
  • 2 tablespoons brown sugar (for glaze)
  • 1 tablespoon apple cider vinegar (for glaze)
  • 1/2 teaspoon garlic powder (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line a rimmed baking sheet with parchment paper or aluminum foil.
  2. In a small skillet, sauté diced onions until translucent, about 5 minutes. Add garlic and cook for 30 seconds until fragrant.
  3. In a large mixing bowl, combine ground beef, sautéed onions and garlic, eggs, milk, breadcrumbs, ketchup, Worcestershire sauce, thyme, salt, pepper, and paprika.
  4. Mix gently with your hands just until ingredients are combined, being careful not to overmix.
  5. Transfer mixture to prepared baking sheet and shape into a loaf approximately 9 inches long and 5 inches wide.
  6. In a small bowl, whisk together glaze ingredients (ketchup, brown sugar, apple cider vinegar, and garlic powder).
  7. Spread half the glaze over the top and sides of the meatloaf.
  8. Bake for 40 minutes, then drain any excess liquid from the pan.
  9. Apply remaining glaze and return to oven for 15-20 more minutes or until internal temperature reaches 160°F (71°C).
  10. Let meatloaf rest for 10 minutes before slicing and serving.
