  • 3 zucchini (diced (about 3 cups))
  • 2 red bell peppers (diced)

  • 1/4 cup olive oil
  • 2 tablespoons fresh thyme leaves

  • 2 bay leaves

Instructions

  1. Step 1: Heat olive oil in a large, heavy-bottomed pot over medium heat.
  2. Step 2: Add onions and garlic, sauté until softened and fragrant, about 5 minutes.
  3. Step 3: Add eggplant and bell peppers. Cook for 8-10 minutes, stirring occasionally.
