- ⅓ cup (75g) unsalted butter, melted
- ¾ cup (150g) granulated sugar
- 1 large egg, room temperature
- 1 teaspoon vanilla extract
- 1½ cups (180g) all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ cup (120ml) buttermilk or sour cream
- ⅓ cup (67g) brown sugar, packed
- 1½ tablespoons ground cinnamon
- 2 tablespoons unsalted butter, melted
Instructions
- Step 1: Preheat your oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving an overhang on the sides for easy removal, and lightly grease any exposed parts. In a small bowl, prepare the cinnamon swirl mixture by combining the brown sugar, ground cinnamon, and melted butter until it resembles wet sand. Set aside while you make the batter.
- Step 2: In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth but still with some small chunks. This texture variation will make your Cinnamon Swirl Banana Bread exceptionally moist. Add the melted butter to the mashed bananas and whisk until combined. Stir in the sugar, egg, and vanilla extract, mixing until incorporated.
- Step 3: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the banana mixture, alternating with the buttermilk, beginning and ending with the flour mixture. Mix just until combined – overmixing will result in tough bread.
- Step 4: Pour one-third of the batter into your prepared loaf pan, spreading it evenly. Sprinkle half of the cinnamon sugar mixture over this layer. Use a butter knife to gently swirl the cinnamon sugar into the batter with a figure-eight motion, being careful not to overmix.
- Step 5: Add another third of the batter on top, then sprinkle with the remaining cinnamon sugar mixture. Again, swirl gently with a knife. Top with the final third of the batter, smoothing the surface.
- Step 6: Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean with a few moist crumbs. If the top begins to brown too quickly, tent with aluminum foil after about 30-35 minutes of baking.
- Step 7: Allow the Cinnamon Swirl Banana Bread to cool in the pan for 15 minutes before using the parchment paper overhang to lift it out. Cool completely on a wire rack before slicing to allow the swirls to set properly.
