Your backyard BBQ just found its new best friend! This Cilantro Lime Chicken practically makes itself in the crockpot while you soak up the sun. Juicy, zesty, and ridiculously simple.

- 2 pounds boneless, skinless chicken breasts or thighs
- 1/4 cup fresh lime juice (approximately 2–3 limes)
- 1 cup fresh cilantro, roughly chopped, plus extra for garnish
- 4 cloves garlic, minced
- 1 medium onion, finely diced
- 1 jalapeño, seeded and minced (optional)
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 lime, sliced for garnish
Instructions
- Heat olive oil in a small skillet over medium heat. Add onion and cook until translucent, about 3-4 minutes. Add garlic and jalapeño and sauté for another minute until fragrant.
- Transfer the sautéed aromatics to your crockpot. Add cumin, oregano, salt, and pepper, stirring to combine. Pour in the fresh lime juice.
- Place chicken in the crockpot, turning to coat with the mixture. Add half of the chopped cilantro.
- Cover and cook on low for 4-5 hours or on high for 2-3 hours, until chicken reaches 165°F and shreds easily.
- About 10 minutes before serving, add the remaining fresh cilantro and stir gently.
- Serve chicken whole or shredded, garnished with lime slices and additional cilantro.
