Description
This chocolate chip zucchini bread is so good, your family will never guess they’re eating vegetables! Moist, chocolatey, and completely irresistible.

- 2 cups (240g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3/4 cup (150g) granulated sugar
- 1/2 cup (100g) light brown sugar, packed
- 1/2 cup (120ml) vegetable oil
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2 cups grated zucchini (about 2 medium zucchini)
- 1 cup (175g) semi-sweet chocolate chips, divided
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on sides.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In a large bowl, whisk together granulated sugar, brown sugar, and oil until combined. Add eggs one at a time, whisking well after each. Stir in vanilla extract.
- Add dry ingredients to wet ingredients and fold gently until almost combined with a few flour streaks remaining.
- Fold in grated zucchini and 3/4 cup chocolate chips just until evenly distributed.
- Pour batter into prepared pan and smooth the top. Sprinkle remaining chocolate chips over the surface.
- Bake for 55-65 minutes, or until a toothpick inserted in center comes out with a few moist crumbs but no wet batter. Tent with foil if top browns too quickly.
- Cool in pan for 15 minutes, then use parchment to lift bread onto a wire rack to cool completely before slicing.
