- 2 lbs (900g) boneless, skinless chicken thighs
- 3 tablespoons (45ml) olive oil
- 4 cloves garlic, minced (about 2 tablespoons)
- 2–3 chipotle peppers in adobo sauce, finely chopped
- 1 tablespoon (15ml) adobo sauce from the can
- 2 tablespoons (30ml) fresh lime juice
- 2 teaspoons (10g) ground cumin
- 2 teaspoons (10g) dried oregano
- 1 teaspoon (5g) paprika
- 2 tablespoons (30ml) honey or brown sugar
- 1½ teaspoons (8g) salt
- ½ teaspoon (2g) black pepper
- ¼ cup (60ml) water or chicken broth
Instructions
- Blend olive oil, garlic, chipotle peppers, adobo sauce, lime juice, spices, honey, salt, pepper, and water until smooth to create marinade.
- Pat chicken dry and make shallow cuts on surface for better flavor absorption.
- Place chicken in a bag or container, pour marinade over it, ensuring all pieces are coated. Refrigerate 3-24 hours.
- Remove chicken from refrigerator 30 minutes before cooking. Preheat grill, broiler, or skillet.
- Cook chicken 5-7 minutes per side until internal temperature reaches 165°F.
- Let chicken rest 5-10 minutes before slicing against the grain into ½-inch strips.
- Serve in burrito bowls, tacos, salads, or as a main dish with your favorite sides.
