  • 2 large eggs (beaten)
  • 1/2 cup frozen peas
  • 1/2 cup frozen carrots (diced)
  • 2 tablespoons soy sauce (adjust to taste)
  • 1 tablespoon sesame oil
  • 2 cloves garlic (minced)
  • 3 green onions (chopped)
  • 1 tablespoon vegetable oil (for cooking)
  • 1/4 cup bell pepper (diced, or any other vegetables of choice)
  • 1 teaspoon fresh ginger (grated, for added flavor)

Instructions

Prep the Ingredients

  1. Step 1: Dice the chicken into small cubes.
  2. Step 2: Chop the green onions and garlic finely.
  3. Step 3: If using day-old rice, break it up gently to separate the grains.

Cook the Chicken

  1. Step 1: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Step 2: Add the diced chicken and cook until browned and cooked through, about 5-7 minutes. Remove and set aside.

Scramble the Eggs
