- 2 cups cooked chicken breast, diced or shredded (about 2 medium breasts)
- 4 large flour tortillas (10-inch size)
- 1/2 cup ranch dressing, plus extra for serving
- 1 cup romaine lettuce, shredded
- 1 medium tomato, diced (about 1/2 cup)
- 1/4 cup red onion, finely diced
- 1/2 cup cheddar cheese, shredded
- 4 slices bacon, cooked and crumbled (optional)
- 1 ripe avocado, sliced (optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
Instructions
- Season and cook chicken breasts if not using pre-cooked chicken, then allow to rest for 5 minutes before dicing or shredding into bite-sized pieces.
- In a medium bowl, combine cooked chicken with 2 tablespoons ranch dressing, a pinch of salt, pepper, and garlic powder, stirring well to coat evenly.
- Warm tortillas slightly in microwave or dry skillet to make them more pliable, then spread 1-2 tablespoons of ranch dressing on each, leaving a 1-inch border.
- Layer shredded lettuce on top of the ranch dressing, followed by the seasoned chicken mixture, tomatoes, red onion, cheese, and optional bacon and avocado.
- Fold in the sides of the tortilla toward the center, then tightly roll from the bottom up, enclosing all fillings.
- If desired, lightly toast the assembled wrap in a panini press or skillet until golden and crispy on the outside.
- Slice diagonally and serve immediately, or wrap tightly in foil or parchment paper for later.
