Chicken Parmesan Casserole


Description

The easiest way to enjoy chicken farm on a busy weeknight! All the flavor, none of the fuss, and it’s ready in just 35 minutes.


Ingredients

  • 2 lbs boneless, skinless chicken breasts, cooked and cubed (about 4 cups)
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 3 cups marinara sauce (homemade or high-quality store-bought)
  • 2 cups shredded mozzarella cheese
  • 1 cup freshly grated Parmesan cheese, divided
  • 1 cup Italian seasoned breadcrumbs
  • 2 tablespoons butter, melted
  • ¼ cup fresh basil leaves, chopped
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish.
  2. In a large bowl, toss the cubed cooked chicken with olive oil, Italian seasoning, garlic powder, salt, and pepper until evenly coated.
  3. Spread about 1 cup of marinara sauce on the bottom of your prepared baking dish.
  4. Add the seasoned chicken pieces in an even layer over the sauce.
  5. Pour the remaining marinara sauce over the chicken and sprinkle the minced garlic throughout.
  6. Layer the shredded mozzarella and ¾ cup of the Parmesan cheese on top of the sauce.
  7. In a small bowl, combine the breadcrumbs, melted butter, and remaining ¼ cup of Parmesan cheese.
  8. Sprinkle the breadcrumb mixture evenly over the cheese layer. Bake uncovered for 25-30 minutes until bubbly and golden brown.
  9. Remove from the oven, let stand for 10 minutes, then garnish with freshly chopped basil before serving.
