Chicken Avocado Melt Sandwich


Description

Crispy on the outside, creamy and cheesy on the inside. This Chicken Avocado Melt is the sandwich upgrade you’ve been waiting for.


Ingredients

  • 8 slices sourdough bread
  • 2 cups cooked chicken breast, shredded or diced
  • 2 ripe avocados, peeled and sliced
  • 8 oz cheese (provolone, Monterey Jack, or cheddar)
  • 4 tbsp butter, softened
  • 2 tbsp mayonnaise
  • 1 tbsp Dijon mustard
  • 1 medium tomato, sliced (optional)
  • 1 cup baby spinach or arugula (optional)
  • Salt and freshly ground black pepper to taste
  • ¼ tsp garlic powder
  • ¼ tsp onion powder

Instructions

  1. Prepare ingredients: Cook chicken if needed and let rest before shredding. Slice avocados and gather remaining ingredients.
  2. Mix 2 tablespoons mayonnaise with 1 tablespoon Dijon mustard in a small bowl to create a spread.
  3. Lay out bread slices and spread the mayo-mustard mixture on the inside of each slice.
  4. On four bread slices, layer chicken, sliced avocado, tomato and greens if using. Season with salt, pepper, garlic powder and onion powder.
  5. Add cheese on top of the seasoned ingredients, then place the remaining bread slices on top, spread-side down.
  6. Butter the outside of each sandwich with softened butter.
  7. Heat a large skillet over medium-low heat. Place sandwiches butter-side down and cook for 3-4 minutes until golden brown.
  8. Flip carefully and cook another 3-4 minutes until cheese is melted and both sides are crispy. Cover with a lid if needed to help cheese melt.
  9. Remove from heat and let rest 1-2 minutes before slicing diagonally.
  10. Serve immediately while warm and gooey.
