Crispy on the outside, creamy and cheesy on the inside. This Chicken Avocado Melt is the sandwich upgrade you’ve been waiting for.

- 8 slices sourdough bread
- 2 cups cooked chicken breast, shredded or diced
- 2 ripe avocados, peeled and sliced
- 8 oz cheese (provolone, Monterey Jack, or cheddar)
- 4 tbsp butter, softened
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 1 medium tomato, sliced (optional)
- 1 cup baby spinach or arugula (optional)
- Salt and freshly ground black pepper to taste
- ¼ tsp garlic powder
- ¼ tsp onion powder
Instructions
- Prepare ingredients: Cook chicken if needed and let rest before shredding. Slice avocados and gather remaining ingredients.
- Mix 2 tablespoons mayonnaise with 1 tablespoon Dijon mustard in a small bowl to create a spread.
- Lay out bread slices and spread the mayo-mustard mixture on the inside of each slice.
- On four bread slices, layer chicken, sliced avocado, tomato and greens if using. Season with salt, pepper, garlic powder and onion powder.
- Add cheese on top of the seasoned ingredients, then place the remaining bread slices on top, spread-side down.
- Butter the outside of each sandwich with softened butter.
- Heat a large skillet over medium-low heat. Place sandwiches butter-side down and cook for 3-4 minutes until golden brown.
- Flip carefully and cook another 3-4 minutes until cheese is melted and both sides are crispy. Cover with a lid if needed to help cheese melt.
- Remove from heat and let rest 1-2 minutes before slicing diagonally.
- Serve immediately while warm and gooey.
