  • lbs (680g) boneless, skinless chicken breasts, cut into 1-inch pieces
  • 2 tbsp (30ml) olive oil
  • 1 tsp (5g) garlic powder
  • 1 tsp (5g) paprika
  • ½ tsp (2.5g) salt
  • ¼ tsp (1g) black pepper
  • 1½ cups (300g) long-grain white rice
  • 3 cups (720ml) chicken broth
  • 1 tbsp (15g) butter
  • ½ tsp (2.5g) salt
  • 3 tbsp (45g) butter
  • 6 cloves garlic, minced (about 2 tbsp)
  • 2 tbsp (16g) all-purpose flour
  • 1½ cups (360ml) chicken broth
  • ¾ cup (180ml) heavy cream
  • ¼ cup (25g) freshly grated Parmesan cheese
  • 1 tsp (5ml) lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped
  • Extra Parmesan cheese
  • Red pepper flakes (optional)

Instructions

  1. Rinse rice until water runs clear. In a medium saucepan, melt 1 tablespoon butter, add rice and toast for 1-2 minutes. Add chicken broth and ½ teaspoon salt. Bring to boil, reduce heat, cover and simmer 15-18 minutes. Remove from heat, let stand covered for 10 minutes, then fluff with fork.
  2. While rice cooks, toss chicken pieces with olive oil, garlic powder, paprika, salt, and pepper. Heat large skillet over medium-high heat, add chicken in single layer, and cook 4-5 minutes until golden and cooked through (165°F). Transfer to plate and cover.
  3. In same skillet, reduce heat to medium and melt 3 tablespoons butter. Add minced garlic and cook 30-45 seconds until fragrant. Sprinkle flour over garlic and butter, whisk constantly for 1 minute.
  4. Gradually pour in chicken broth while whisking. Bring to simmer and cook 2-3 minutes until thickening. Reduce heat to low, stir in heavy cream, Parmesan cheese, and lemon juice. Season with salt and pepper to taste. Simmer 2-3 minutes until desired consistency.
  5. Divide rice among serving bowls, top with chicken, and spoon creamy garlic sauce over everything. Garnish with parsley, additional Parmesan, and red pepper flakes if desired. Serve immediately.
