  • 2 packages (7oz/200g each) ladyfinger cookies (savoiardi)
  • 1/2 cup (120ml) amaretto liqueur
  • 1/4 cup (60ml) cherry juice (from compote)
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 cup (25g) dark chocolate shavings

Instructions

  1. Step 1: Prepare the Cherry Compote Begin by combining the pitted cherries, sugar, and lemon juice in a medium saucepan over medium heat. Bring the mixture to a gentle simmer, stirring occasionally. Cook for about 10-12 minutes until the cherries soften and release their juices. Remove from heat and stir in the amaretto liqueur and vanilla extract. Transfer to a bowl and refrigerate until completely cooled. Once cooled, strain the cherries, reserving 1/4 cup of the juice for soaking the ladyfingers.
  2. Step 2: Create the Mascarpone Filling In a large bowl, beat the mascarpone cheese with sugar until smooth and light. Add the egg yolks one at a time, mixing well after each addition. Gradually stir in the amaretto and vanilla extract until fully incorporated. In a separate bowl, whip the egg whites until stiff peaks form.
