Who needs plain chicken when you can have it smothered in melty provolone cheese? This easy baked chicken is your new weeknight dinner hero!

- 4 boneless, skinless chicken breasts (about 2 pounds total)
- 8 slices provolone cheese (about 6 ounces)
- 2 tablespoons olive oil
- 2 teaspoons Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika (sweet or smoked)
- 1 teaspoon salt
- ½ teaspoon freshly ground black pepper
- ¼ cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
- If chicken breasts are uneven in thickness, pound them between plastic wrap to about 1-inch thickness. Pat dry with paper towels.
- In a small bowl, combine Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper. Drizzle chicken with olive oil, then rub with the spice mixture on both sides.
- Arrange the seasoned chicken in the prepared baking dish, leaving space between pieces.
- Bake for 20 minutes in the preheated oven.
- Remove from oven and top each chicken breast with 2 slices of provolone cheese. Sprinkle with Parmesan cheese.
- Return to the oven and bake for 5-7 minutes more, until cheese is melted and chicken reaches 165°F internal temperature. For a golden top, broil for the final 1-2 minutes.
- Let rest for 5 minutes before serving. Garnish with fresh parsley.
