Cheesy Provolone Baked Chicken


Description

Who needs plain chicken when you can have it smothered in melty provolone cheese? This easy baked chicken is your new weeknight dinner hero!


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 pounds total)
  • 8 slices provolone cheese (about 6 ounces)
  • 2 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika (sweet or smoked)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. If chicken breasts are uneven in thickness, pound them between plastic wrap to about 1-inch thickness. Pat dry with paper towels.
  3. In a small bowl, combine Italian seasoning, garlic powder, onion powder, paprika, salt, and pepper. Drizzle chicken with olive oil, then rub with the spice mixture on both sides.
  4. Arrange the seasoned chicken in the prepared baking dish, leaving space between pieces.
  5. Bake for 20 minutes in the preheated oven.
  6. Remove from oven and top each chicken breast with 2 slices of provolone cheese. Sprinkle with Parmesan cheese.
  7. Return to the oven and bake for 5-7 minutes more, until cheese is melted and chicken reaches 165°F internal temperature. For a golden top, broil for the final 1-2 minutes.
  8. Let rest for 5 minutes before serving. Garnish with fresh parsley.
