Cheesy Mozzarella Chicken Bake

Ingredients

4 boneless, skinless chicken breasts (about 2 lbs/900g)

2 cups (16 oz/475ml) marinara sauce

8 oz (225g) fresh mozzarella cheese, sliced

1/2 cup (2 oz/55g) grated Parmesan cheese

2 tablespoons olive oil

2 teaspoons Italian seasoning

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

Fresh basil leaves for garnish


Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. Mix Italian seasoning, salt, pepper, garlic, and olive oil in a small bowl.
  2. Check chicken breasts for even thickness and pound if necessary to about 3/4 inch thickness. Pat dry with paper towels.
  3. Rub the seasoning paste evenly over both sides of each chicken breast.
  4. Heat a large skillet over medium-high heat. Sear seasoned chicken for 2-3 minutes per side until golden brown.
  5. Spread 1/2 cup marinara sauce in the bottom of the baking dish. Arrange seared chicken on top with space between pieces.
  6. Pour remaining marinara sauce over and around the chicken breasts.
  7. Layer mozzarella slices over each chicken breast and sprinkle Parmesan cheese across the entire dish.
  8. Bake uncovered for 25-30 minutes until chicken reaches 165°F (74°C) and cheese is bubbly. Broil for the final 2-3 minutes if you want a more golden top.
  9. Remove from oven, let rest for 5-7 minutes, and garnish with fresh torn basil leaves before serving.
