Cheesy Garlic Butter Rollups

These Cheesy Garlic Butter Rollups are the addictive snack you didn’t know you needed in your life. One bite of these crispy, gooey wonders and you’ll never look at bread and cheese the same way again.


Ingredients

  • 1 loaf (16 oz) soft white bread, crusts removed
  • 8 oz mozzarella cheese, cut into 4-inch sticks about ½-inch thick
  • 6 tablespoons unsalted butter
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil (for brushing)

Instructions

  1. Melt butter in a small saucepan over medium-low heat. Add minced garlic and cook for 30-45 seconds until fragrant. Remove from heat and stir in parsley, Italian seasoning, salt, and pepper.
  2. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  3. Remove crusts from bread slices and flatten each slice with a rolling pin until about ¼-inch thick.
  4. Brush each flattened bread slice with garlic butter mixture and sprinkle with some Parmesan cheese.
  5. Place a mozzarella stick along one edge of each bread slice and tightly roll up, enclosing the cheese completely.
  6. Brush the outside of each rollup with olive oil, then roll in remaining Parmesan cheese to coat.
  7. Arrange rollups on prepared baking sheet, seam-side down, spacing them about 1 inch apart.
  8. Bake for 12-15 minutes until golden brown and cheese is melted.
  9. Let cool for 2-3 minutes before serving warm, garnished with additional chopped parsley if desired.
