  • 3 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced (about 1 cup)
  • 2 cloves garlic, minced
  • 2 cups cooked chicken, shredded or cubed
  • 1 red bell pepper, diced (about 1 cup)
  • 1 cup corn kernels, fresh or frozen
  • 1 can diced tomatoes, drained
  • 2 teaspoons Italian seasoning
  • ½ teaspoon smoked paprika
  • 2 cups shredded cheese (a mix of cheddar and mozzarella works well)
  • ¼ cup grated Parmesan cheese
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Step 1: Prepare the Quinoa Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish. In a medium saucepan, combine the rinsed quinoa with 3 cups of chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes before fluffing with a fork. The quinoa should be tender but still have a slight bite to it.
  2. Step 2: Cook the Aromatics and Vegetables While the quinoa cooks, heat olive oil in a large skillet over medium heat. Add the diced onion and cook for 4-5 minutes until softened and translucent. Add minced garlic and cook for another 30 seconds until fragrant. Stir in the diced bell pepper and corn, cooking for 3-4 minutes until the vegetables begin to soften.   3. Step 3: Combine All Components In a large mixing bowl, combine the cooked quinoa, vegetable mixture, shredded chicken, and drained diced tomatoes.
