  • 2 lbs (900g) boneless, skinless chicken breasts
  • 3 tablespoons (45ml) olive oil, divided
  • 2 teaspoons (10g) Italian seasoning
  • 1 teaspoon (5g) garlic powder
  • Salt and black pepper to taste
  • 4 large tomatoes (about 1.5 lbs/680g), sliced 1/4-inch thick
  • 8 oz (225g) fresh mozzarella, sliced
  • 1/2 cup (50g) grated parmesan cheese
  • 1/4 cup (6g) fresh basil leaves, chopped, plus more for garnish
  • 2 cloves garlic, minced
  • 1 tablespoon (15ml) balsamic glaze, plus more for drizzling

Instructions

  1. Preheat oven to 375°F (190°C). Pound chicken breasts to even thickness (about 3/4 inch) and pat dry.
  2. Mix 2 tablespoons olive oil with Italian seasoning, garlic powder, salt, and pepper. Brush over chicken.
  3. Heat remaining olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
  4. Toss tomato slices with minced garlic, salt, and balsamic glaze.
  5. Layer tomatoes over the chicken, sprinkle with half the basil, then add mozzarella slices and parmesan cheese.
  6. Bake for 15-20 minutes until chicken reaches 165°F (74°C) and cheese is melted and beginning to brown.
  7. Let rest for 5-10 minutes, then drizzle with additional balsamic glaze and remaining fresh basil before serving.
