This 30-minute Cheesy Chicken Caprese Casserole combines all the flavors of your favorite Italian salad into one gooey, satisfying dinner that’s ready faster than delivery.

- 2 lbs (900g) boneless, skinless chicken breasts
- 3 tablespoons (45ml) olive oil, divided
- 2 teaspoons (10g) Italian seasoning
- 1 teaspoon (5g) garlic powder
- Salt and black pepper to taste
- 4 large tomatoes (about 1.5 lbs/680g), sliced 1/4-inch thick
- 8 oz (225g) fresh mozzarella, sliced
- 1/2 cup (50g) grated parmesan cheese
- 1/4 cup (6g) fresh basil leaves, chopped, plus more for garnish
- 2 cloves garlic, minced
- 1 tablespoon (15ml) balsamic glaze, plus more for drizzling
Instructions
- Preheat oven to 375°F (190°C). Pound chicken breasts to even thickness (about 3/4 inch) and pat dry.
- Mix 2 tablespoons olive oil with Italian seasoning, garlic powder, salt, and pepper. Brush over chicken.
- Heat remaining olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden brown.
- Toss tomato slices with minced garlic, salt, and balsamic glaze.
- Layer tomatoes over the chicken, sprinkle with half the basil, then add mozzarella slices and parmesan cheese.
- Bake for 15-20 minutes until chicken reaches 165°F (74°C) and cheese is melted and beginning to brown.
- Let rest for 5-10 minutes, then drizzle with additional balsamic glaze and remaining fresh basil before serving.
