Ingredients

  • 1 box (18.3 oz) fudge brownie mix
  • 1/3 cup all-purpose flour
  • 2 large eggs, at room temperature
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup toffee bits (such as Heath or Skor), divided
  • 20 soft caramel candies, cut into quarters
  • 1/4 teaspoon flaky sea salt (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together brownie mix and flour until no lumps remain.
  3. Create a well in the center and add eggs, oil, and vanilla. Mix until just combined.
  4. Fold in 3/4 cup toffee bits, reserving the rest for topping.
  5. Cover and let dough rest for 15-20 minutes at room temperature.
  6. Scoop dough into 1.5-inch balls and place on prepared baking sheets, spacing 2 inches apart.
  7. Press your thumb into each dough ball to create an indentation. Place 2-3 caramel pieces in each indentation.
  8. Reshape cookies to partially cover caramel and sprinkle with remaining toffee bits.
  9. Bake for 9-11 minutes until edges are set but centers look slightly underdone.
  10. If desired, sprinkle cookies with sea salt immediately after removing from oven.
  11. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
