These Caramel Toffee Brownie Mix Cookies are what happens when brownie batter meets cookie form – crispy edges, fudgy centers, and pockets of gooey caramel in every bite.

- 1 box (18.3 oz) fudge brownie mix
- 1/3 cup all-purpose flour
- 2 large eggs, at room temperature
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup toffee bits (such as Heath or Skor), divided
- 20 soft caramel candies, cut into quarters
- 1/4 teaspoon flaky sea salt (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, whisk together brownie mix and flour until no lumps remain.
- Create a well in the center and add eggs, oil, and vanilla. Mix until just combined.
- Fold in 3/4 cup toffee bits, reserving the rest for topping.
- Cover and let dough rest for 15-20 minutes at room temperature.
- Scoop dough into 1.5-inch balls and place on prepared baking sheets, spacing 2 inches apart.
- Press your thumb into each dough ball to create an indentation. Place 2-3 caramel pieces in each indentation.
- Reshape cookies to partially cover caramel and sprinkle with remaining toffee bits.
- Bake for 9-11 minutes until edges are set but centers look slightly underdone.
- If desired, sprinkle cookies with sea salt immediately after removing from oven.
- Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
