These Caramel Apple Cheesecake Bars combine three dessert favorites into one irresistible treat – the perfect excuse to have your cheesecake, apple pie, and caramel all in one bite!

- 2 cups (240g) graham cracker crumbs (about 16 full sheets)
- 1/2 cup (113g) unsalted butter, melted
- 1/4 cup (50g) granulated sugar
- 1/2 teaspoon ground cinnamon
- 16 oz (450g) cream cheese, softened to room temperature
- 1/2 cup (100g) granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1/4 cup (60g) sour cream
- 3 medium apples (about 1 lb/450g), peeled and diced small
- 2 tablespoons (30g) unsalted butter
- 1/4 cup (50g) brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon cornstarch
- 3/4 cup (90g) all-purpose flour
- 1/2 cup (100g) brown sugar, packed
- 1/4 teaspoon salt
- 6 tablespoons (85g) cold unsalted butter, cubed
- 1/2 cup (120ml) caramel sauce
Instructions
- Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper.
- Mix graham cracker crumbs, melted butter, sugar, and cinnamon. Press firmly into pan and bake for 10 minutes.
- Beat cream cheese and sugar until fluffy. Add eggs one at a time, then mix in vanilla and sour cream. Pour over crust.
- In a saucepan, cook diced apples with butter, brown sugar, cinnamon, and nutmeg for 5-7 minutes. Add cornstarch, cook 1 minute more, then cool slightly.
- Spread apple mixture over cheesecake layer.
- Combine flour, brown sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs. Sprinkle over apples.
- Bake for 40-45 minutes until golden and center is slightly jiggly.
- Cool completely, then refrigerate for at least 3 hours or overnight.
- Drizzle with caramel sauce before slicing into bars.
- Allow to sit at room temperature for 15 minutes before serving for best flavor.
