Cajun Shrimp and Sausage Vegetable Skillet

This Cajun Shrimp and Sausage Skillet brings the heat in just 30 minutes! It’s a colorful one-pan dinner that’s perfect for busy weeknights but tastes like you spent hours in the kitchen.

  • 1 lb (450g) large shrimp, peeled and deveined
  • 14 oz (400g) Andouille sausage, sliced into ¼-inch rounds
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into half-moons
  • 1 medium yellow squash, sliced into half-moons
  • 1 red onion, cut into 1-inch pieces
  • 4 cloves garlic, minced
  • 2 tbsp olive oil, divided
  • 23 tbsp Cajun seasoning (adjust to taste)
  • 1 tsp dried oregano
  • ½ tsp paprika
  • ¼ tsp cayenne pepper (optional, for extra heat)
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • 1 lemon, cut into wedges (for serving)

Instructions

  1. Pat shrimp dry with paper towels and toss with 1 tablespoon Cajun seasoning in a small bowl until evenly coated. Set aside.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add sausage slices and cook for 2-3 minutes until browned. Remove to a plate.
  3. In the same skillet, add seasoned shrimp in a single layer (working in batches if needed). Cook for 1-2 minutes per side until just pink and opaque. Remove to the plate with sausage.
  4. Add remaining tablespoon of olive oil to the skillet. Add red onion and cook for 2 minutes until beginning to soften.
  5. Add minced garlic and cook for 30 seconds until fragrant. Add all bell peppers and cook for 2-3 minutes.
  6. Add zucchini and yellow squash along with remaining Cajun seasoning, dried oregano, paprika, and cayenne (if using). Cook for 3-4 minutes until vegetables are tender-crisp.
  7. Return sausage and shrimp to the skillet, gently folding everything together. Cook for 1-2 minutes until everything is heated through.
  8. Taste and adjust seasoning with salt and pepper as needed.
  9. Remove from heat, sprinkle with fresh parsley, and serve immediately with lemon wedges.
