- 1½ pounds (680g) boneless, skinless chicken breasts, cut into strips
- 3 tablespoons Cajun seasoning (store-bought or homemade)
- 2 tablespoons olive oil
- 1 red bell pepper, sliced into strips
- 1 green bell pepper, sliced into strips
- 1 yellow bell pepper, sliced into strips
- 1 medium onion, thinly sliced
- 4 cloves garlic, minced
- 1 cup (240ml) chicken broth
- 2 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- ¼ cup (15g) fresh parsley, chopped
- Salt and black pepper, to taste
Instructions
- Pat chicken strips dry with paper towels. Season with 2 tablespoons Cajun seasoning in a bowl and let rest for 10 minutes.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken in batches for 2-3 minutes per side until golden. Transfer to a plate.
- Add remaining oil to the pan. Sauté onions for 2 minutes, then add bell peppers and garlic. Season with remaining Cajun seasoning and cook for 3-4 minutes until peppers are bright but still crisp.
- Return chicken to the pan. Add chicken broth and bring to a simmer. Cook 5-7 minutes until liquid reduces by half and chicken reaches 165°F.
- Stir in butter and lemon juice during the last minute of cooking to create a silky sauce.
- Remove from heat, adjust seasoning if needed, and sprinkle with fresh parsley before serving.
