Description

Gooey butterscotch goodness and pillowy marshmallows combine in these no-bake bars that will disappear faster than you can say dessert. Perfect for potlucks or midnight snacking.


Ingredients

  • 3 tablespoons (42g) unsalted butter
  • 1 package (11 oz/311g) butterscotch chips
  • ¼ cup (60ml) creamy peanut butter (optional)
  • 4 cups (120g) crispy rice cereal
  • 3 cups (150g) mini marshmallows, divided
  • ½ teaspoon (2.5ml) vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Line an 8×8 or 9×9-inch square baking pan with parchment paper and lightly coat with cooking spray.
  2. In a large microwave-safe bowl or medium saucepan, melt the butter completely.
  3. Add butterscotch chips to the melted butter and heat gently until melted (use 15-second intervals at 50% power if microwaving).
  4. Stir in peanut butter (if using), vanilla extract, and salt until the mixture is smooth.
  5. Cool for 1 minute, then add 2 cups of mini marshmallows and stir until they begin to melt.
  6. Fold in the rice cereal gently until coated with the butterscotch mixture.
  7. Fold in the remaining 1 cup of mini marshmallows, leaving them mostly intact.
  8. Transfer mixture to the prepared pan and gently spread into an even layer.
  9. Allow bars to set at room temperature for 1-2 hours or refrigerate for 30-45 minutes.
  10. Once firm, lift out using parchment paper and cut into squares with a sharp knife.
