Description
Gooey butterscotch goodness and pillowy marshmallows combine in these no-bake bars that will disappear faster than you can say dessert. Perfect for potlucks or midnight snacking.

- 3 tablespoons (42g) unsalted butter
- 1 package (11 oz/311g) butterscotch chips
- ¼ cup (60ml) creamy peanut butter (optional)
- 4 cups (120g) crispy rice cereal
- 3 cups (150g) mini marshmallows, divided
- ½ teaspoon (2.5ml) vanilla extract
- ¼ teaspoon salt
Instructions
- Line an 8×8 or 9×9-inch square baking pan with parchment paper and lightly coat with cooking spray.
- In a large microwave-safe bowl or medium saucepan, melt the butter completely.
- Add butterscotch chips to the melted butter and heat gently until melted (use 15-second intervals at 50% power if microwaving).
- Stir in peanut butter (if using), vanilla extract, and salt until the mixture is smooth.
- Cool for 1 minute, then add 2 cups of mini marshmallows and stir until they begin to melt.
- Fold in the rice cereal gently until coated with the butterscotch mixture.
- Fold in the remaining 1 cup of mini marshmallows, leaving them mostly intact.
- Transfer mixture to the prepared pan and gently spread into an even layer.
- Allow bars to set at room temperature for 1-2 hours or refrigerate for 30-45 minutes.
- Once firm, lift out using parchment paper and cut into squares with a sharp knife.
