- Prepare the dough: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the vanilla extract and mix until combined. Gradually add the flour and salt, mixing until a dough forms.
- Chill the dough: Cover the dough with plastic wrap and refrigerate it for 30 minutes to make it easier to roll out.
- Roll and cut the dough: Preheat the oven to 350°F (175°C). Roll the dough on a floured surface to about 1/4-inch thickness. Use cookie cutters to cut the dough into your desired shapes.
- Bake the cookies: Place the cookies on a baking sheet lined with parchment paper. Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool completely on a wire rack.
- Melt the chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until the chocolate is smooth and melted.
- Dip the cookies: Once the cookies are cool, dip the top half of each cookie into the melted chocolate. Allow any excess chocolate to drip off.
- Add sprinkles: Immediately sprinkle the dipped cookies with your choice of sprinkles while the chocolate is still soft. Let the chocolate set for about 30 minutes before serving.
