These Buffalo Chicken Roll Ups pack all the flavor of wings without the mess – the perfect game day finger food that will have everyone asking for your secret recipe!

- 2 cups (280g) cooked chicken, shredded (rotisserie chicken works perfectly)
- 8 oz (226g) cream cheese, softened
- 1/3 cup (80ml) buffalo sauce (Frank’s RedHot or similar)
- 1 packet (1 oz/28g) ranch seasoning mix, divided
- 1/2 cup (56g) blue cheese crumbles (optional)
- 1/2 cup (56g) shredded cheddar cheese
- 4 green onions, finely chopped
- 6 large (10-inch) flour tortillas
- 2 tablespoons (30ml) butter, melted
- 1/4 cup (60ml) ranch or blue cheese dressing, for serving
Instructions
- In a large mixing bowl, combine softened cream cheese and 3/4 of the ranch seasoning packet until smooth. Add buffalo sauce and mix until well combined.
- Fold in shredded chicken, cheddar cheese, blue cheese (if using), and most of the chopped green onions, reserving some for garnish.
- Lay a tortilla flat and spread about 1/3 cup of the buffalo chicken mixture across the bottom third, leaving an inch of space on each edge.
- Fold in the sides of the tortilla, then roll from the bottom up to create a tight cylinder. Place seam-side down on a parchment-lined baking sheet.
- Repeat with remaining tortillas and filling.
- Preheat oven to 375°F (190°C). Mix melted butter with remaining ranch seasoning and brush over the roll ups.
- Bake for 15-20 minutes until golden brown and crispy.
- Let cool for 3-5 minutes, then cut each roll up diagonally into 2-3 pieces.
- Sprinkle with reserved green onions and serve with extra buffalo sauce and ranch or blue cheese dressing for dipping.
