- 1½ pounds boneless, skinless chicken breasts or thighs, cut into 1-inch chunks
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅔ cup buffalo sauce (like Frank’s RedHot)
- 3 cups cooked white rice (about 1 cup uncooked)
- 1 cup diced celery (about 2–3 stalks)
- ½ cup thinly sliced green onions
- ½ cup crumbled blue cheese
- ¼ cup ranch or blue cheese dressing
- 1 tablespoon fresh chopped parsley (optional)
- 1 tablespoon butter (optional, for added richness in sauce)
Instructions
- Cook rice according to package directions. Once done, fluff with a fork and keep warm.
- In a medium bowl, combine chicken pieces with olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Heat a large skillet over medium-high heat. Add the seasoned chicken in a single layer (work in batches if needed) and cook for 4-5 minutes until golden brown and cooked through (165°F internal temperature).
- Reduce heat to low. If using butter, add it to the pan and let melt. Pour buffalo sauce over the chicken and toss to coat evenly. Simmer for 30 seconds, then remove from heat.
- Divide warm rice among serving bowls. Top each with a portion of buffalo chicken, spooning any extra sauce over the top.
- Sprinkle each bowl with diced celery, green onions, and crumbled blue cheese. Drizzle with ranch or blue cheese dressing and garnish with fresh parsley if desired.
