- 4 store-bought flatbreads or naan breads (about 8-inch size)
- 2 cups cooked chicken breast, shredded
- 3/4 cup buffalo sauce, divided
- 2 tablespoons butter, melted
- 2 cups shredded mozzarella cheese
- 1/2 cup crumbled blue cheese (optional)
- 1/2 red onion, thinly sliced
- 3 tablespoons ranch dressing, plus more for drizzling
- 1/4 cup chopped celery
- 1/4 cup sliced green onions
- 2 tablespoons chopped fresh cilantro
- 1 tablespoon olive oil
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat oven to 425°F (220°C) with baking sheet inside. In a bowl, combine shredded chicken with 1/2 cup buffalo sauce and melted butter.
- Remove hot baking sheet from oven. Place flatbreads on it and brush edges with olive oil mixed with garlic powder. Pre-bake for 2-3 minutes.
- Remove flatbreads and spread a thin layer of ranch dressing over each, leaving a 1/2-inch border. Sprinkle half the mozzarella cheese evenly over flatbreads.
- Distribute buffalo chicken mixture evenly across flatbreads, then add red onion slices. Top with remaining mozzarella and blue cheese crumbles.
- Bake for 8-10 minutes until cheese is bubbly and beginning to brown, and edges are golden and crisp.
- Remove from oven and drizzle with remaining buffalo sauce and additional ranch. Sprinkle with chopped celery, green onions, and cilantro.
- Slice into pieces and serve immediately while hot.
