- 2 lbs (900g) boneless, skinless chicken thighs, cut into 2-inch pieces
- 1/2 cup (100g) brown sugar, packed
- 8 cloves garlic, minced (about 3 tablespoons)
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes
- 2 tablespoons fresh ginger, grated (optional)
- 2 tablespoons cornstarch
- 3 tablespoons water
- 2 green onions, thinly sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a medium bowl, whisk together brown sugar, minced garlic, soy sauce, sesame oil, red pepper flakes, and ginger. Set aside 1/4 of this mixture. In a separate small bowl, combine cornstarch and water to make a slurry.
- Pat chicken pieces dry with paper towels and season lightly with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken in a single layer (working in batches if needed) and sear for 3-4 minutes per side until golden brown.
- Pour the larger portion of sauce over the chicken and reduce heat to medium-low. Simmer for about 5 minutes, turning chicken occasionally to coat evenly.
- When chicken reaches 165°F/74°C internal temperature, add the cornstarch slurry to the pan. Stir gently and simmer for 1-2 more minutes until sauce thickens into a glossy glaze.
- Remove from heat, drizzle with reserved sauce, and garnish with green onions and sesame seeds. Serve immediately over rice.
