- 2 cloves garlic, minced
- 1 cup heavy cream (or milk for a lighter version)

- 2 cups shredded sharp cheddar cheese
- ½ cup grated Parmesan cheese
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon ground mustard (optional, for added flavor)
- 1 cup breadcrumbs (optional, for topping)
- 2 tablespoons butter (for topping, if using breadcrumbs)

- Cook the Broccoli: Start by steaming or boiling the broccoli until it’s tender but still slightly firm, about 5-7 minutes. If using frozen broccoli, follow the package instructions for cooking. Drain the broccoli well and set it aside.
- Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Add the chopped onion and minced garlic and sauté until the onion is soft and translucent. Add the flour and whisk constantly for 1-2 minutes to make a roux. Gradually add the cream and chicken broth, continuing to whisk until the mixture is smooth. Bring to a simmer and cook for 4-5 minutes until the sauce thickens.
- Add the Cheese: Stir in the cheddar cheese and Parmesan cheese, one handful at a time, until fully melted and smooth. Season the sauce with salt, pepper, and ground mustard, adjusting to taste.
- Assemble the Casserole: Pour the cooked broccoli into a greased casserole dish. Pour the cheese sauce over the broccoli and mix gently to combine. If you’re adding breadcrumbs, sprinkle them over the top and drizzle with melted butter.
- Bake the Casserole: Preheat your oven to 350°F (175°C). Place the casserole in the oven and bake for 20-25 minutes, or until the top is golden brown and bubbly. If you added breadcrumbs, they should be crispy and golden.
