- 4 large eggs
- 4 small flour or corn tortillas
- 1 tablespoon olive oil (for cooking)
- 2 strips of Beef or ½ cup sausage (or meat of your choice)
- 1 bell pepper, diced
- ½ small onion, diced
- 1 small avocado, sliced (optional)
- ½ cup shredded cheese (cheddar, Monterey Jack, or your choice)
- Fresh salsa or hot sauce (optional)
- Fresh cilantro, for garnish
- Salt and pepper to taste
Instructions
- Cook the protein: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bacon or sausage and cook until crispy. Remove from the skillet and set aside to drain on paper towels.
- Sauté the vegetables: In the same skillet, add the diced bell pepper and onion. Sauté for 3-4 minutes, until they’re soft and slightly caramelized. Set aside.
- Scramble the eggs: In a separate pan, scramble the eggs over low heat. Season with salt and pepper. Stir gently until the eggs are cooked through but still soft and creamy.
- Warm the tortillas: Heat the tortillas in a dry skillet or microwave them for 10-15 seconds until they’re warm and pliable.
- Assemble the tacos: Lay each warm tortilla on a plate. Add a generous scoop of scrambled eggs to the center. Top with bacon or sausage, sautéed vegetables, cheese, avocado slices, and fresh salsa. Garnish with cilantro.
