  • 4 large eggs
  • 4 small flour or corn tortillas
  • 1 tablespoon olive oil (for cooking)
  • 2 strips of Beef or ½ cup sausage (or meat of your choice)
  • 1 bell pepper, diced
  • ½ small onion, diced
  • 1 small avocado, sliced (optional)
  • ½ cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • Fresh salsa or hot sauce (optional)
  • Fresh cilantro, for garnish
  • Salt and pepper to taste

Instructions

  1. Cook the protein: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bacon or sausage and cook until crispy. Remove from the skillet and set aside to drain on paper towels.
  2. Sauté the vegetables: In the same skillet, add the diced bell pepper and onion. Sauté for 3-4 minutes, until they’re soft and slightly caramelized. Set aside.
  3. Scramble the eggs: In a separate pan, scramble the eggs over low heat. Season with salt and pepper. Stir gently until the eggs are cooked through but still soft and creamy.
  4. Warm the tortillas: Heat the tortillas in a dry skillet or microwave them for 10-15 seconds until they’re warm and pliable.
  5. Assemble the tacos: Lay each warm tortilla on a plate. Add a generous scoop of scrambled eggs to the center. Top with bacon or sausage, sautéed vegetables, cheese, avocado slices, and fresh salsa. Garnish with cilantro.
