- 4 slices sourdough bread (thick-cut, approximately ½-inch slices)
- 2 tablespoons salted butter, softened
- 4 ounces sharp cheddar cheese, freshly grated
- 2 large eggs
- 1 tablespoon whole milk
- 2 strips bacon, cooked until crispy and roughly chopped
- 1 tablespoon maple syrup
- Salt and freshly ground black pepper to taste
- 1 green onion, thinly sliced (optional)
- ½ avocado, thinly sliced (optional)
Instructions
- Whisk eggs with milk and season with salt and pepper. Cook in a non-stick pan over medium-low heat until just set but still slightly moist. Set aside.
- Butter one side of each bread slice. Place two slices buttered-side down and sprinkle half the cheese over them.
- Divide scrambled eggs between the two sandwiches, spreading evenly over the cheese layer.
- Sprinkle bacon pieces over the eggs, then drizzle each with maple syrup. Add green onions and avocado if using.
- Add remaining cheese on top of fillings and place remaining bread slices on top, buttered-side facing outward.
- Heat a skillet over medium-low heat. Cook sandwiches for 3-4 minutes per side until golden brown and cheese is completely melted.
- Let rest for 1 minute before slicing diagonally. Serve immediately while hot and gooey.
