Breakfast Grilled Cheese

Ingredients

  • 4 slices sourdough bread (thick-cut, approximately ½-inch slices)
  • 2 tablespoons salted butter, softened
  • 4 ounces sharp cheddar cheese, freshly grated
  • 2 large eggs
  • 1 tablespoon whole milk
  • 2 strips bacon, cooked until crispy and roughly chopped
  • 1 tablespoon maple syrup
  • Salt and freshly ground black pepper to taste
  • 1 green onion, thinly sliced (optional)
  • ½ avocado, thinly sliced (optional)

Instructions

  1. Whisk eggs with milk and season with salt and pepper. Cook in a non-stick pan over medium-low heat until just set but still slightly moist. Set aside.
  2. Butter one side of each bread slice. Place two slices buttered-side down and sprinkle half the cheese over them.
  3. Divide scrambled eggs between the two sandwiches, spreading evenly over the cheese layer.
  4. Sprinkle bacon pieces over the eggs, then drizzle each with maple syrup. Add green onions and avocado if using.
  5. Add remaining cheese on top of fillings and place remaining bread slices on top, buttered-side facing outward.
  6. Heat a skillet over medium-low heat. Cook sandwiches for 3-4 minutes per side until golden brown and cheese is completely melted.
  7. Let rest for 1 minute before slicing diagonally. Serve immediately while hot and gooey.
