Breakfast Butter Swim Biscuits

Ingredients

  • 2½ cups (310g) all-purpose flour
  • 2 cups (480ml) buttermilk
  • 1 tablespoon (15g) granulated sugar
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (5g) salt
  • ½ cup (113g) salted butter
  • 1 tablespoon (15g) honey (optional)
  • 2 tablespoons (28g) melted butter for brushing tops
  • ¼ teaspoon (1g) flaky sea salt for topping (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Select an 8×8 or 9×9-inch square baking dish.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  3. Pour buttermilk into the dry ingredients and stir gently just until no dry flour remains visible. The batter should be thick and slightly lumpy.
  4. Cut cold butter into thin slices and arrange evenly across the bottom of your baking dish. Drizzle with honey if using.
  5. Pour the biscuit batter over the butter, then spread it evenly to the edges. Score the batter into 9 or 12 squares with a knife.
  6. Bake for 20-25 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
  7. Brush the tops with melted butter and sprinkle with flaky sea salt if desired.
  8. Let cool in the pan for about 5 minutes before serving warm.
