- 4 large (10-inch) flour tortillas
- 8 large eggs
- 1/4 cup (60ml) milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon (15ml) olive oil or butter
- 8 oz (225g) breakfast sausage or bacon, cooked and crumbled
- 1 cup (120g) shredded cheddar cheese
- 1 medium red bell pepper, diced
- 1/2 medium red onion, finely diced
- 1 ripe avocado, sliced
- 1/4 cup (60ml) salsa
- 2 tablespoons fresh cilantro, chopped
- Hot sauce to taste (optional)
Instructions
- Prepare all ingredients: Cook and crumble bacon or sausage, dice vegetables, and have everything ready for assembly.
- Whisk eggs, milk, salt, and pepper in a bowl until well combined.
- Heat oil or butter in a non-stick skillet over medium-low heat. Pour in egg mixture and cook, gently folding occasionally, until just set but still slightly glossy, about 3-4 minutes.
- Warm tortillas in a dry skillet for 10-15 seconds per side until pliable, keeping them covered with a kitchen towel to stay warm.
- For each burrito, sprinkle cheese across the lower third of a tortilla, leaving a 1-inch border.
- Layer with eggs, meat, vegetables, avocado, salsa, and cilantro.
- Fold in the sides of the tortilla, then fold the bottom edge up over the filling and roll tightly away from you to form a cylinder.
- Serve immediately or wrap in foil for later.
- For storage, refrigerate up to 2 days or freeze up to 3 months, properly wrapped.
