  • 4 large (10-inch) flour tortillas
  • 8 large eggs
  • 1/4 cup (60ml) milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon (15ml) olive oil or butter
  • 8 oz (225g) breakfast sausage or bacon, cooked and crumbled
  • 1 cup (120g) shredded cheddar cheese
  • 1 medium red bell pepper, diced
  • 1/2 medium red onion, finely diced
  • 1 ripe avocado, sliced
  • 1/4 cup (60ml) salsa
  • 2 tablespoons fresh cilantro, chopped
  • Hot sauce to taste (optional)

Instructions

  1. Prepare all ingredients: Cook and crumble bacon or sausage, dice vegetables, and have everything ready for assembly.
  2. Whisk eggs, milk, salt, and pepper in a bowl until well combined.
  3. Heat oil or butter in a non-stick skillet over medium-low heat. Pour in egg mixture and cook, gently folding occasionally, until just set but still slightly glossy, about 3-4 minutes.
  4. Warm tortillas in a dry skillet for 10-15 seconds per side until pliable, keeping them covered with a kitchen towel to stay warm.
  5. For each burrito, sprinkle cheese across the lower third of a tortilla, leaving a 1-inch border.
  6. Layer with eggs, meat, vegetables, avocado, salsa, and cilantro.
  7. Fold in the sides of the tortilla, then fold the bottom edge up over the filling and roll tightly away from you to form a cylinder.
  8. Serve immediately or wrap in foil for later.
  9. For storage, refrigerate up to 2 days or freeze up to 3 months, properly wrapped.
