- 2 1/2 cups (590ml) whole milk

- 1/8 teaspoon cayenne pepper (optional)
- 4 large biscuits (homemade or store-bought)
- 2 cups (300g) prepared hash browns
- 4 large eggs, prepared to your preference
- 4 tablespoons (60g) butter, divided
- 1/4 cup (25g) shredded cheddar cheese
- 2 tablespoons chopped fresh chives or green onions
Instructions
- Step 1: Prepare the sausage gravy Heat a large skillet over medium heat. Add the breakfast sausage and break it into crumbles with a wooden spoon. Cook for 8-10 minutes until no longer pink and slightly browned. Do not drain the fat.
- Step 2: Sprinkle the flour evenly over the cooked sausage Stir continuously for 1-2 minutes to cook the flour and form a roux with the sausage fat. The mixture should look slightly paste-like and coat the sausage.
- Step 3: Gradually pour in the milk while whisking constantly Start with about 1/2 cup, stirring until completely smooth, then slowly add the remaining milk. Add salt, black pepper, and cayenne (if using).
- Step 4: Bring the mixture to a gentle simmer Cook for 5-7 minutes, stirring frequently, until the gravy has thickened to coat the back of a spoon. Remove from heat and adjust seasoning to taste. Cover to keep warm while preparing the other components.
- Step 5: If using store-bought biscuits heat according to package directions. For hash browns, cook in a separate skillet with 2 tablespoons butter until golden and crispy on both sides, about 5-7 minutes.
- Step 6: Prepare the eggs to your preference For sunny-side up, melt the remaining 2 tablespoons butter in a non-stick skillet over medium heat. Crack eggs into the skillet and cook until whites are set but yolks are still runny, about 3-4 minutes.
