- 1 package (8 biscuits) refrigerated biscuit dough
- 6 large eggs, scrambled
- 1 cup shredded cheese (cheddar, mozzarella, or a blend)
- 1/2 cup cooked bacon or sausage (crumbled)
- 1/4 cup diced onion (optional)
- 1/4 cup diced bell pepper (optional)
- Salt and pepper, to taste
- 1 tablespoon olive oil (for greasing the pan)
Instructions
- Prepare the Filling: In a skillet, scramble the eggs with a pinch of salt and pepper. Once the eggs are cooked through, set them aside. If you’re adding vegetables or cooked meat, sauté them in the same pan and mix them into the eggs.
- Prepare the Dough: Preheat the oven to 375°F (190°C). Lightly grease a baking sheet with olive oil or cooking spray. Open the refrigerated biscuit dough and separate each biscuit into individual rounds.
- Assemble the Bombs: Flatten each biscuit round slightly with your hands or a rolling pin. Spoon a generous amount of scrambled eggs and filling into the center of each biscuit. Top with a little shredded cheese and fold the dough around the filling, pinching the edges to seal the bomb.
- Bake the Bombs: Place the filled biscuits seam-side down on the baking sheet. Brush the tops with a little olive oil or butter for extra crispiness. Bake in the preheated oven for 15-18 minutes, or until the tops are golden brown and the biscuit dough is cooked through.
- Serve: Remove the Breakfast Bombs from the oven and let them cool for a few minutes. Serve immediately with your favorite breakfast sides, like hash browns, fruit, or a fresh salad.
