  • 6 large eggs
  • ¼ cup milk
  • 8 oz breakfast sausage or bacon
  • 1 cup diced potatoes
  • ½ cup diced bell peppers (any color)
  • ½ cup diced onion
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • 2 tablespoons fresh chopped cilantro or parsley (optional)
  • Hot sauce or salsa (to taste)

Instructions

  1. Step 1: Prepare Your Filling Components Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the diced potatoes and cook for 5-7 minutes until they begin to soften. Add the diced onions and bell peppers to the skillet, continuing to cook for another 3-4 minutes until the vegetables are tender and the potatoes are golden brown. Season with salt, pepper, and garlic powder. Transfer this mixture to a plate and set aside.
  2. Step 2: Cook The Protein In the same skillet, cook your choice of breakfast meat. If using sausage, break it into small crumbles and cook until browned and no longer pink, about 5-6 minutes. If using bacon, cook until crispy, then chop into small pieces. Drain excess fat, leaving about 1 teaspoon in the pan for flavor.
  3. Step 3: Perfect The Eggs Whisk together eggs and milk in a bowl until well combined. Lower the heat to medium-low and pour the egg mixture into the skillet. Let it set slightly before using a spatula to gently pull the eggs from the edges toward the center. Continue this motion until eggs are softly scrambled but still slightly moist – they’ll finish cooking with residual heat. Fold in the cooked potato mixture and breakfast meat, then remove from heat.
  4. Step 4: Assemble Your Burritos Warm your tortillas using your preferred method. Place a tortilla on a flat surface and sprinkle 1/4 cup shredded cheese across the lower third of the tortilla, leaving about an inch from the edges. Spoon approximately 3/4 cup of the filling mixture on top of the cheese. Add a dash of hot sauce or salsa if desired, and sprinkle with fresh herbs.
  5. Step 5: Wrap And Seal To wrap your Break Burritos, fold in both sides of the tortilla toward the center. Then, firmly fold the bottom edge up and over the filling, using your fingers to tuck the edge under the filling while rolling. Continue rolling upward tightly until the burrito is completely wrapped. For an optional crispy exterior, place the wrapped burrito seam-side down in a clean skillet over medium heat for 1-2 minutes per side until golden brown and sealed.
