Creamy goat cheese, sweet vanilla, and juicy blueberries combine in one elegant appetizer that looks fancy but takes just minutes to prepare. Your guests will think you spent hours in the kitchen!

- 8 oz (227g) fresh goat cheese (chèvre), at room temperature
- 2 tablespoons (30g) cream cheese, softened
- 1 tablespoon (13g) granulated sugar
- 1½ teaspoons pure vanilla extract
- ¼ teaspoon lemon zest (optional)
- 1 cup (150g) fresh blueberries, washed and thoroughly dried
- 2 tablespoons (30ml) honey, plus more for drizzling
- ⅓ cup (40g) chopped pistachios or sliced almonds (optional)
- Fresh thyme sprigs for garnish (optional)
Instructions
- Blend room-temperature goat cheese and cream cheese in a medium bowl until smooth and completely combined, about 1-2 minutes.
- Add sugar, vanilla extract, and lemon zest (if using) to the cheese mixture and fold gently until fully incorporated.
- Carefully fold in ½ cup of the blueberries, distributing them throughout the cheese mixture while keeping them whole.
- Transfer the mixture onto a large piece of plastic wrap, then shape into a log approximately 6-7 inches long and 2 inches in diameter. Twist ends to secure and refrigerate for at least 2 hours or overnight.
- When ready to serve, unwrap the chilled cheese log and place on a serving platter. Toss remaining blueberries with honey and press onto the exterior of the cheese log.
- If using nuts, sprinkle over any areas not covered by blueberries. Garnish with thyme sprigs if desired, drizzle with additional honey, and allow to stand at room temperature for 15-20 minutes before serving.
