Ingredients

  • 6 cups mixed salad greens (about 5 oz)
  • 2 ripe peaches, sliced (about 2 cups)
  • 1 cup fresh blueberries
  • 4 oz feta cheese, crumbled
  • 1/3 cup thinly sliced red onion
  • 1/3 cup sliced almonds, toasted
  • 1/4 cup fresh mint leaves, torn
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Instructions

  1. Prepare the dressing by whisking together olive oil, white wine vinegar, honey, Dijon mustard, salt, and pepper in a small bowl until emulsified.
  2. Toast sliced almonds in a dry skillet over medium heat for 3-5 minutes until golden and fragrant, then set aside to cool.
  3. Place washed and thoroughly dried mixed greens in a large salad bowl.
  4. Add sliced peaches and blueberries to the greens.
  5. Scatter sliced red onion and torn mint leaves throughout the salad.
  6. Sprinkle crumbled feta cheese and toasted almonds over the top.
  7. Just before serving, drizzle with dressing and gently toss to combine all ingredients.
