- 6 cups mixed salad greens (about 5 oz)
- 2 ripe peaches, sliced (about 2 cups)
- 1 cup fresh blueberries
- 4 oz feta cheese, crumbled
- 1/3 cup thinly sliced red onion
- 1/3 cup sliced almonds, toasted
- 1/4 cup fresh mint leaves, torn
- 3 tablespoons extra virgin olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Prepare the dressing by whisking together olive oil, white wine vinegar, honey, Dijon mustard, salt, and pepper in a small bowl until emulsified.
- Toast sliced almonds in a dry skillet over medium heat for 3-5 minutes until golden and fragrant, then set aside to cool.
- Place washed and thoroughly dried mixed greens in a large salad bowl.
- Add sliced peaches and blueberries to the greens.
- Scatter sliced red onion and torn mint leaves throughout the salad.
- Sprinkle crumbled feta cheese and toasted almonds over the top.
- Just before serving, drizzle with dressing and gently toss to combine all ingredients.
