Ingredients

  • 4 cups (500g) all-purpose flour, plus extra for dusting
  • 1 package (2¼ tsp) active dry yeast
  • ½ cup (100g) granulated sugar
  • 1 tsp salt
  • 1 cup (240ml) whole milk, warmed to 110°F
  • ⅓ cup (75g) unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 tbsp vanilla extract (clear vanilla preferred)
  • ½ cup (115g) unsalted butter, softened (for filling)
  • 1 cup (200g) brown sugar, packed
  • 2 tbsp ground cinnamon
  • 2 tsp vanilla extract (for filling)
  • ¼ cup rainbow sprinkles (jimmies, not nonpareils)
  • 8 oz (225g) cream cheese, softened
  • ¼ cup (55g) unsalted butter, softened (for frosting)
  • 2 cups (240g) powdered sugar
  • 1 tbsp clear vanilla extract (for frosting)
  • ¼ cup rainbow sprinkles, plus extra for garnish

Instructions

  1. In a small bowl, combine warm milk, 1 tablespoon of sugar, and yeast. Let sit for 5-10 minutes until foamy.
  2. In a stand mixer with dough hook, combine remaining sugar, flour, and salt. Add yeast mixture, melted butter, eggs, and vanilla. Mix on low for 2 minutes, then increase to medium and knead 5-7 minutes until smooth and elastic.
  3. Transfer dough to a greased bowl, cover, and let rise in a warm place for 1-1½ hours until doubled in size.
  4. Meanwhile, mix softened butter, brown sugar, cinnamon, and vanilla until smooth for the filling.
  5. Punch down risen dough and roll on a floured surface into an 18×14 inch rectangle.
  6. Spread filling evenly over dough, leaving a ½-inch border along one long edge. Sprinkle with ¼ cup rainbow sprinkles.
  7. Starting from the long edge with filling to the edge, tightly roll into a log. Pinch the seam to seal.
  8. Cut into 12 equal pieces and place in a greased 9×13 inch baking dish.
  9. Cover and let rise 30-45 minutes until puffy. Preheat oven to 350°F.
  10. Bake for 25-30 minutes until golden brown.
  11. Beat cream cheese and butter until creamy. Add powdered sugar gradually, then mix in vanilla. Fold in sprinkles.
  12. Let rolls cool 5-10 minutes before frosting. Sprinkle with additional rainbow sprinkles and serve warm.
