  • 3½ teaspoons baking powder

  • 1 tablespoon granulated sugar
  • 1¼ cups (295ml) whole milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon pure vanilla extract
  • Butter or oil for cooking

Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar until well combined.
  2. In a separate bowl, beat the egg, then whisk in milk, melted butter, and vanilla extract.
  3. Make a well in the center of dry ingredients and pour in wet ingredients. Stir just until moistened and combined, leaving some lumps.
  4. Let batter rest for 5-10 minutes while you heat a griddle or skillet over medium heat.
  5. Lightly grease the cooking surface with butter or oil.
  6. Pour ¼ cup portions of batter onto the hot surface and cook until bubbles form on top and edges look set (2-3 minutes).
  7. Flip with a spatula and cook another 1-2 minutes until golden brown on both sides.
