- 3½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1¼ cups (295ml) whole milk
- 1 large egg
- 3 tablespoons unsalted butter, melted
- 1 teaspoon pure vanilla extract
- Butter or oil for cooking
Instructions
- In a large bowl, whisk together flour, baking powder, salt, and sugar until well combined.
- In a separate bowl, beat the egg, then whisk in milk, melted butter, and vanilla extract.
- Make a well in the center of dry ingredients and pour in wet ingredients. Stir just until moistened and combined, leaving some lumps.
- Let batter rest for 5-10 minutes while you heat a griddle or skillet over medium heat.
- Lightly grease the cooking surface with butter or oil.
- Pour ¼ cup portions of batter onto the hot surface and cook until bubbles form on top and edges look set (2-3 minutes).
