- 2 cups cooked chicken, shredded (about 8 oz of rotisserie chicken)
- 8 oz cream cheese, softened
- 1 cup sour cream
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 2 tablespoons sriracha sauce
- 1 tablespoon honey
- 1 teaspoon garlic powder
- 1 cup shredded mozzarella cheese
- ½ cup shredded cheddar cheese
- 3 green onions, thinly sliced (reserve some for garnish)
- 2 tablespoons chopped fresh cilantro (optional, for garnish)
- Tortilla chips, crackers, or vegetables for serving
Instructions
- Preheat oven to 350°F (175°C). Make sure cream cheese is softened to room temperature.
- In a large mixing bowl, combine the softened cream cheese, sour cream, and mayonnaise until smooth and well-blended.
- Stir in the sweet chili sauce, sriracha, honey, and garlic powder until fully incorporated.
- Fold in the shredded chicken, ¾ cup of the mozzarella cheese, ¼ cup of the cheddar cheese, and most of the sliced green onions (save some for garnish).
- Transfer the mixture to a 1.5-quart baking dish and spread evenly. Top with remaining cheese.
- Bake for 20-25 minutes until edges are bubbling and top is golden brown.
- Optional: Broil for the final 1-2 minutes for an extra golden top.
- Remove from oven and let rest for 5 minutes before garnishing with reserved green onions and cilantro.
- Serve warm with tortilla chips, crackers, or fresh vegetables for dipping.
