Banana Oatmeal Bars

Ingredients

  • 3 medium ripe bananas (about 1½ cups mashed)
  • 2 cups old-fashioned rolled oats
  • ¼ cup honey or maple syrup
  • ¼ cup melted coconut oil or unsalted butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Optional add-ins: ½ cup chocolate chips, chopped nuts, or dried fruit

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, thoroughly mash the ripe bananas with a fork until mostly smooth.
  3. Add the melted coconut oil (or butter), honey (or maple syrup), egg, and vanilla extract to the mashed bananas and stir until well combined.
  4. In a separate bowl, mix together the rolled oats, cinnamon, baking powder, and salt.
  5. Pour the dry ingredients into the wet banana mixture and fold gently until just combined. Fold in any optional add-ins.
  6. Transfer the batter to your prepared baking pan and spread it evenly with a spatula.
  7. Bake for 25-30 minutes, or until the edges are golden brown and the center is set but still slightly soft.
  8. Allow to cool in the pan for 10 minutes before lifting out and transferring to a cooling rack.
  9. Let cool completely (about 30 minutes) before cutting into 12-16 squares.
