This 60-second banana nut mug cake will have you questioning why you ever bothered with full-sized banana bread. Quick, fluffy, and perfectly portioned for one!

- 1 ripe banana (about 1/3 cup when mashed)
- 1 large egg
- 2 tablespoons vegetable oil or melted butter
- 1/4 teaspoon vanilla extract
- 3 tablespoons granulated sugar
- 5 tablespoons all-purpose flour
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 2 tablespoons chopped walnuts or pecans (plus extra for topping)
Instructions
- Mash banana thoroughly in a microwave-safe mug (at least 12 oz capacity).
- Add egg, oil, and vanilla to the mashed banana and mix well with a fork.
- Stir in the sugar until incorporated.
- In a separate small bowl, combine flour, baking powder, salt, and cinnamon.
- Add dry ingredients to the mug and gently fold until just combined (about 12-15 strokes).
- Fold in the chopped nuts, reserving a few pieces for the top.
- Sprinkle reserved nuts on top and microwave on high for 60-90 seconds, until center is just set.
- Let stand for 1-2 minutes before enjoying.
