Ingredients

  • 1 ripe banana (about 1/3 cup when mashed)
  • 1 large egg
  • 2 tablespoons vegetable oil or melted butter
  • 1/4 teaspoon vanilla extract
  • 3 tablespoons granulated sugar
  • 5 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons chopped walnuts or pecans (plus extra for topping)

Instructions

  1. Mash banana thoroughly in a microwave-safe mug (at least 12 oz capacity).
  2. Add egg, oil, and vanilla to the mashed banana and mix well with a fork.
  3. Stir in the sugar until incorporated.
  4. In a separate small bowl, combine flour, baking powder, salt, and cinnamon.
  5. Add dry ingredients to the mug and gently fold until just combined (about 12-15 strokes).
  6. Fold in the chopped nuts, reserving a few pieces for the top.
  7. Sprinkle reserved nuts on top and microwave on high for 60-90 seconds, until center is just set.
  8. Let stand for 1-2 minutes before enjoying.
