Description

Baked Stuffed Shrimp Casserole with succulent shrimp, creamy filling, and crispy topping. A crowd-pleasing seafood dish to savor!

  • 2 pounds (900g) large shrimp, peeled and deveined (2125 count)
  • 4 tablespoons (60g) unsalted butter, melted
  • 1 cup (120g) seasoned breadcrumbs
  • ¼ cup (30g) grated Parmesan cheese
  • 3 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon paprika
  • ¼ cup (60ml) white wine (or chicken broth)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • ¼ cup (40g) finely diced red bell pepper
  • ¼ cup (40g) finely diced celery
  • 2 green onions, thinly sliced

Instructions

  1. Step 1: Prepare the Shrimp Preheat the oven to 375°F (190°C). Rinse the shrimp under cold water and pat dry with paper towels. Butterfly each shrimp by cutting along the outer curve almost all the way through, leaving the inner curve intact. Gently press each shrimp flat to create a butterfly shape. Remove any remaining veins and place the prepared shrimp on a clean kitchen towel.
  2. Step 2: Make the Stuffing Heat olive oil in a skillet over medium heat. Cook diced red bell pepper and celery until softened, about 3-4 minutes. Add minced garlic and cook for another 30 seconds. Remove from heat, transfer to a mixing bowl, and add breadcrumbs, Parmesan, parsley, lemon juice, paprika, and melted butter. Mix well.
  3. Step 3: Stuff and Arrange the Shrimp Grease a 9×13 inch baking dish. Season the butterflied shrimp with salt and pepper. Press stuffing onto the cut side of each shrimp and arrange them in the baking dish, stuffing side up. Drizzle wine or broth around shrimp.
  4. Step 4: Add Final Touches and Bake Sprinkle remaining stuffing mixture over shrimp. Drizzle remaining melted butter over everything and scatter sliced green onions on top. Bake in the preheated oven for 12-15 minutes until shrimp are pink and opaque, and the stuffing is golden brown and crispy.
  5. Step 5: Bake to Perfection Place the baking dish in the preheated oven and bake for 12-15 minutes, until the shrimp are pink and opaque and the stuffing is golden brown and crispy on top. Be careful not to overcook, as the shrimp will become tough. If needed, you can broil for the final minute to achieve a perfectly golden top. Remove from the oven and let the Baked Stuffed Shrimp Casserole rest for 2-3 minutes before serving.
