  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 8 oz (1 cup) queso dip (store-bought or homemade)
  • 1 cup shredded Mexican cheese blend
  • ¼ cup diced tomatoes
  • ¼ cup diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 jalapeño, thinly sliced (optional)

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 baking dish with cooking spray.
  2. Pat chicken breasts dry with paper towels, then pound to an even ¾-inch thickness.
  3. Drizzle chicken with olive oil and rub to coat both sides evenly.
  4. Mix salt, pepper, garlic powder, chili powder, and cumin in a small bowl, then season chicken on both sides.
  5. Place chicken breasts in the prepared baking dish and bake for 15 minutes.
  6. Remove dish from oven and spoon queso dip evenly over each chicken breast.
  7. Sprinkle shredded Mexican cheese blend over the queso layer.
  8. Return to oven and bake for 10-15 more minutes until chicken reaches 165°F and cheese is golden and bubbly.
  9. Let rest for 5 minutes, then top with diced tomatoes, red onion, cilantro, and jalapeños if using.
  10. Serve immediately while still warm for the best flavor and texture.
