- 1 teaspoon garlic powder

- ½ teaspoon ground cumin
- 8 oz (1 cup) queso dip (store-bought or homemade)
- 1 cup shredded Mexican cheese blend
- ¼ cup diced tomatoes
- ¼ cup diced red onion
- 2 tablespoons chopped fresh cilantro
- 1 jalapeño, thinly sliced (optional)
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 baking dish with cooking spray.
- Pat chicken breasts dry with paper towels, then pound to an even ¾-inch thickness.
- Drizzle chicken with olive oil and rub to coat both sides evenly.
- Mix salt, pepper, garlic powder, chili powder, and cumin in a small bowl, then season chicken on both sides.
- Place chicken breasts in the prepared baking dish and bake for 15 minutes.
- Remove dish from oven and spoon queso dip evenly over each chicken breast.
- Sprinkle shredded Mexican cheese blend over the queso layer.
