  • ½ cup (120ml) whole milk, room temperature
  • ½ cup (63g) all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 tablespoons (42g) unsalted butter

Instructions

  1. Place a 10-inch cast iron skillet in the oven and preheat to 425°F (220°C) for at least 10 minutes.
  2. Meanwhile, in a blender or bowl, combine eggs, milk, flour, sugar, vanilla, and salt. Mix just until combined, being careful not to overmix.
  3. When the oven and pan are fully preheated, carefully remove the hot skillet using oven mitts.
  4. Add butter to the hot pan, swirling to coat the bottom and sides as it melts.
  5. Immediately pour the batter into the hot buttered pan and return to the oven.
  6. Bake for 15-20 minutes until the pancake is puffed dramatically and golden brown.
