Baked Feta Eggs Recipe

Make your mornings magical with these Baked Feta Eggs! Creamy feta, jammy eggs, and savory tomato sauce combine for a breakfast that looks fancy but takes just minutes to prep.


Ingredients

  • 8 oz (225g) block feta cheese
  • 4 large eggs, at room temperature
  • 2 tablespoons olive oil, plus more for drizzling
  • 1 cup (240ml) marinara sauce or tomato sauce
  • 2 cloves garlic, finely minced
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • Fresh ground black pepper to taste
  • 3 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, thinly sliced
  • Crusty bread, for serving

Instructions

  1. Preheat oven to 400°F (200°C). Pour tomato sauce into a baking dish and stir in minced garlic, half the oregano, and red pepper flakes.
  2. Place the block of feta in the center of the tomato sauce. Drizzle with olive oil and sprinkle with remaining oregano and black pepper.
  3. Bake for 10 minutes until feta begins to soften but isn’t completely melted.
  4. Remove dish from oven. Create four wells in the sauce around the feta using the back of a spoon.
  5. Carefully crack each egg into its own well, keeping yolks intact.
  6. Return to oven and bake for 8-10 minutes for runny yolks, or 12-14 minutes for more set yolks.
  7. Remove from oven and let rest for 2 minutes. Sprinkle with fresh parsley and basil.
  8. Serve immediately with crusty bread for dipping.
