Make your mornings magical with these Baked Feta Eggs! Creamy feta, jammy eggs, and savory tomato sauce combine for a breakfast that looks fancy but takes just minutes to prep.

- 8 oz (225g) block feta cheese
- 4 large eggs, at room temperature
- 2 tablespoons olive oil, plus more for drizzling
- 1 cup (240ml) marinara sauce or tomato sauce
- 2 cloves garlic, finely minced
- 1 teaspoon dried oregano
- ½ teaspoon red pepper flakes
- Fresh ground black pepper to taste
- 3 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, thinly sliced
- Crusty bread, for serving
Instructions
- Preheat oven to 400°F (200°C). Pour tomato sauce into a baking dish and stir in minced garlic, half the oregano, and red pepper flakes.
- Place the block of feta in the center of the tomato sauce. Drizzle with olive oil and sprinkle with remaining oregano and black pepper.
- Bake for 10 minutes until feta begins to soften but isn’t completely melted.
- Remove dish from oven. Create four wells in the sauce around the feta using the back of a spoon.
- Carefully crack each egg into its own well, keeping yolks intact.
- Return to oven and bake for 8-10 minutes for runny yolks, or 12-14 minutes for more set yolks.
- Remove from oven and let rest for 2 minutes. Sprinkle with fresh parsley and basil.
- Serve immediately with crusty bread for dipping.
