Baked Feta Chicken


Description

Juicy chicken meets melty feta in this one-pan dinner that looks fancy but takes just minutes to prep. Your family will think you spent hours in the kitchen.


Ingredients

  • 4 boneless, skinless chicken breasts (about 2 lbs total)
  • 8 oz block of feta cheese (not pre-crumbled)
  • 2 pints cherry or grape tomatoes
  • 4 cloves garlic, minced
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tbsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp paprika
  • ½ tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish (about ¼ cup, roughly chopped)

Instructions

  1. Preheat oven to 400°F (200°C). Pat chicken breasts dry and season with salt and pepper. If needed, pound to an even ¾-inch thickness.
  2. In a 9×13-inch baking dish, combine cherry tomatoes and minced garlic. Add olive oil, lemon juice, and half the oregano, thyme, and paprika. Toss to coat.
  3. Arrange chicken breasts among the tomatoes. Place the block of feta in the center of the dish (or cut into four pieces and place one on each chicken breast).
  4. Sprinkle remaining herbs and spices over chicken and feta. Add red pepper flakes if using.
  5. Bake for 20 minutes, then increase temperature to 425°F (220°C) and bake for an additional 10-15 minutes until chicken reaches 165°F internally and feta turns golden.
  6. Remove from oven and let rest for 5 minutes. Garnish with fresh basil before serving.
