- 4 boneless, skinless chicken breasts (about 2 lbs total)
- 8 oz block of feta cheese (not pre-crumbled)
- 2 pints cherry or grape tomatoes
- 4 cloves garlic, minced
- ¼ cup extra virgin olive oil
- 2 tbsp fresh lemon juice
- 1 tbsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- ½ tsp red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Fresh basil leaves for garnish (about ¼ cup, roughly chopped)
Instructions
- Preheat oven to 400°F (200°C). Pat chicken breasts dry and season with salt and pepper. If needed, pound to an even ¾-inch thickness.
- In a 9×13-inch baking dish, combine cherry tomatoes and minced garlic. Add olive oil, lemon juice, and half the oregano, thyme, and paprika. Toss to coat.
- Arrange chicken breasts among the tomatoes. Place the block of feta in the center of the dish (or cut into four pieces and place one on each chicken breast).
- Sprinkle remaining herbs and spices over chicken and feta. Add red pepper flakes if using.
- Bake for 20 minutes, then increase temperature to 425°F (220°C) and bake for an additional 10-15 minutes until chicken reaches 165°F internally and feta turns golden.
- Remove from oven and let rest for 5 minutes. Garnish with fresh basil before serving.
