These Baked Chicken Bites with Asparagus are what weeknight dinner dreams are made of: quick, healthy, and so tasty you’ll forget you’re eating something good for you!

- 1½ pounds (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 pound (450g) fresh asparagus, woody ends trimmed
- 3 tablespoons (45ml) olive oil, divided
- 2 teaspoons (6g) garlic powder
- 1 teaspoon (3g) paprika
- 1 teaspoon (5g) sea salt
- ½ teaspoon (1g) black pepper
- ½ teaspoon (1g) dried thyme
- ¼ teaspoon (0.5g) cayenne pepper (optional)
- 2 tablespoons (30ml) fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons (8g) fresh parsley, chopped
- Lemon wedges, for serving
Instructions
- Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper. Pat chicken pieces dry with paper towels.
- In a large bowl, combine 2 tablespoons olive oil, garlic powder, paprika, half the salt, half the pepper, and dried thyme. Add chicken pieces and toss to coat evenly.
- In a separate bowl, toss the asparagus with remaining olive oil, minced garlic, remaining salt and pepper, and half the lemon juice.
- Spread seasoned chicken on one side of the baking sheet and arrange asparagus on the other side in a single layer.
- Bake for 10 minutes, then remove and flip the chicken pieces.
- Return to oven and cook for another 5-8 minutes until chicken reaches 165°F (74°C) internal temperature and asparagus is tender-crisp.
- Remove from oven, drizzle with remaining lemon juice, and sprinkle with fresh parsley.
- Let rest for 3-5 minutes before serving with lemon wedges.
