Baked Chicken Bites with Asparagus

Ingredients

  • pounds (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 pound (450g) fresh asparagus, woody ends trimmed
  • 3 tablespoons (45ml) olive oil, divided
  • 2 teaspoons (6g) garlic powder
  • 1 teaspoon (3g) paprika
  • 1 teaspoon (5g) sea salt
  • ½ teaspoon (1g) black pepper
  • ½ teaspoon (1g) dried thyme
  • ¼ teaspoon (0.5g) cayenne pepper (optional)
  • 2 tablespoons (30ml) fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons (8g) fresh parsley, chopped
  • Lemon wedges, for serving

Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper. Pat chicken pieces dry with paper towels.
  2. In a large bowl, combine 2 tablespoons olive oil, garlic powder, paprika, half the salt, half the pepper, and dried thyme. Add chicken pieces and toss to coat evenly.
  3. In a separate bowl, toss the asparagus with remaining olive oil, minced garlic, remaining salt and pepper, and half the lemon juice.
  4. Spread seasoned chicken on one side of the baking sheet and arrange asparagus on the other side in a single layer.
  5. Bake for 10 minutes, then remove and flip the chicken pieces.
  6. Return to oven and cook for another 5-8 minutes until chicken reaches 165°F (74°C) internal temperature and asparagus is tender-crisp.
  7. Remove from oven, drizzle with remaining lemon juice, and sprinkle with fresh parsley.
  8. Let rest for 3-5 minutes before serving with lemon wedges.
