This Baked Caprese Chicken takes just 30 minutes to make but tastes like you spent all day in the kitchen. Pure Italian-inspired magic on a plate!

- 4 boneless, skinless chicken breasts (about 6–8 oz each)
- 2 tablespoons olive oil
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups cherry tomatoes, halved (about 1 pint)
- 8 oz fresh mozzarella, sliced into 8 rounds
- 1/4 cup fresh basil leaves, plus more for garnish
- 2 tablespoons balsamic glaze (store-bought or homemade)
Instructions
- Preheat your oven to 400°F (200°C). Pat chicken breasts dry and season both sides with Italian seasoning, garlic powder, salt, and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
- Scatter halved cherry tomatoes around the chicken in the skillet. Place in the preheated oven and bake for about 10 minutes, until chicken is almost cooked through.
- Remove from oven and top each chicken breast with 2 slices of mozzarella and a few basil leaves. Return to oven for 5-7 minutes until cheese is melted and chicken reaches 165°F internally.
- Drizzle with balsamic glaze just before serving and garnish with additional fresh basil leaves.
