Baked Caprese Chicken


Description

This Baked Caprese Chicken takes just 30 minutes to make but tastes like you spent all day in the kitchen. Pure Italian-inspired magic on a plate!


Ingredients

  • 4 boneless, skinless chicken breasts (about 68 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cherry tomatoes, halved (about 1 pint)
  • 8 oz fresh mozzarella, sliced into 8 rounds
  • 1/4 cup fresh basil leaves, plus more for garnish
  • 2 tablespoons balsamic glaze (store-bought or homemade)

Instructions

  1. Preheat your oven to 400°F (200°C). Pat chicken breasts dry and season both sides with Italian seasoning, garlic powder, salt, and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  3. Scatter halved cherry tomatoes around the chicken in the skillet. Place in the preheated oven and bake for about 10 minutes, until chicken is almost cooked through.
  4. Remove from oven and top each chicken breast with 2 slices of mozzarella and a few basil leaves. Return to oven for 5-7 minutes until cheese is melted and chicken reaches 165°F internally.
  5. Drizzle with balsamic glaze just before serving and garnish with additional fresh basil leaves.
