  • 4 boneless, skinless chicken breasts (about 2 pounds)
  • 1 cup Caesar dressing (store-bought or homemade)
  • 1 cup panko breadcrumbs
  • ¾ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley, finely chopped
  • 1 teaspoon garlic powder
  • ½ teaspoon lemon zest
  • ½ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • 2 tablespoons olive oil
  • Lemon wedges for serving

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Place a wire rack on top if available.
  2. Pat chicken breasts dry with paper towels. Pound to even ¾-inch thickness if needed.
  3. Pour Caesar dressing into a shallow bowl. In another bowl, combine panko, Parmesan, parsley, garlic powder, lemon zest, oregano, and pepper.
  4. Dip each chicken breast in Caesar dressing, allowing excess to drip off.
  5. Press each piece firmly into the breadcrumb mixture, coating both sides completely.
  6. Place breaded chicken on the prepared baking sheet, ensuring pieces don’t touch. Drizzle or spray with olive oil.
  7. Bake for 25-30 minutes until internal temperature reaches 165°F (74°C) and coating is golden brown. For extra crispiness, broil for final 1-2 minutes.
  8. Let chicken rest for 5 minutes before serving with fresh lemon wedges.
